How do you remove Caffeine from Coffee Beans?
Pachamama coffee is decaffeinated through the Swiss Water Process. It is a decaffeinating process in which only water and coffee are used. Essentially, the beans are soaked in a Green Coffee Extract, then the caffeine is filtered out through a carbon filter, and the process is repeated for 8 hours, at which point the coffee is 99.9% caffeine free.
The Green Coffee Extract is all of the soluble flavor components from a particular bean. In this case, Peru. The idea is that since the water has the same concentration of flavor and flavor profile as the bean, none of the soluble flavors are extracted from the bean while soaking. This leaves only the caffeine to be extracted from the beans into the Green Bean Extract. The Green Coffee Extract is then filtered to remove the caffeine, and the process is repeated.
This process allows the coffee to remain an organic product. The other and more prevalent decaffeinating process uses the chemical Methylene Chloride. Although the Methylene Chloride is entirely purged from the beans, we believe that the Swiss Water Process is both more natural and produces a cleaner flavor.
